For the cookies:
¾ cup maple syrup
1/2 cup olive oil
1 large egg
1 tsp vanilla extract
1 tsp peppermint extract
1 cup + 1 tbsp all purpose flour
1/3 cup cocoa powder
1/2 tsp baking soda
¼ tsp sea salt
¼ cup dark chocolate chips
2 tbsp crushed peppermint
For the chocolate coating:
1/2 cup dark chocolate
1 tsp coconut oil
Sprinkles and/or crushed peppermint
Instructions:
— Mix wet ingredients
— Add dry + fold in chocolate chips
— Scoop onto parchment + bake @ 325°F for 10–12 min
— Dip in melted chocolate, sprinkle peppermint
— Chill to set
