Peppermint Mocha Cookies

Healthy recipes, training, & more

For the cookies:

  • ¾ cup maple syrup

  • 1/2 cup olive oil

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 tsp peppermint extract

  • 1 cup + 1 tbsp all purpose flour

  • 1/3 cup cocoa powder

  • 1/2 tsp baking soda

  • ¼ tsp sea salt

  • ¼  cup dark chocolate chips

  • 2 tbsp crushed peppermint

For the chocolate coating:

  • 1/2 cup dark chocolate

  • 1 tsp coconut oil

  • Sprinkles and/or crushed peppermint

Instructions:

— Mix wet ingredients
— Add dry + fold in chocolate chips
— Scoop onto parchment + bake @ 325°F for 10–12 min
— Dip in melted chocolate, sprinkle peppermint
— Chill to set
